This weekend Little O and I decided to do some baking. Baking with toddlers is a bit of a mixed bag. It is probably about 75% stress and 25% joy. The pitfalls include a lot of mess, a lot of impatience and potential food hygiene issues. I manage to keep the latter under control by giving Little O a piece of dough to play with that never actually ends up in the oven… so there’s a tip for you.
These super easy biscuits are cute and colourful and manageable even with an almost three year old in tow!
225g cold butter
1 cup sugar
1 teaspoon vanilla extract
3 cups flour
2 teaspoons baking powder
Preheat your oven to 180 C and line two baking sheets with grease proof paper/baking parchment.
Beat together the butter and sugar until smooth. It’s hard work doing it with the cold butter but it’s important for stopping the biscuits from spreading and losing their shape. You can do this with an electric beater but I actually found it easier with a wooden spoon.
Mix in the vanilla and egg. Add the flour and baking powder and mix together to form a dough. I find it easiest to do this bit by hand.
Roll out your dough to about 5mm thick on a floured surface. Use Easter themed biscuit cutters to cut into shapes. We had eggs, bunnies and chicks. Place the cut out biscuits on the prepared trays and place in the fridge for 10 minutes. This also helps to prevent spreading.
Bake for 10 – 12 minutes in the middle of the oven. They should be a light golden brown around the edges. Leave on the tray to cool for a few minutes before transferring to a wire rack to cool completely.
When it comes to making glace icing I have to admit that I don’t really measure. I just sift some icing sugar and then stir in just enough water for a spreadable consistency. The I divide it into bowls to colour. I associate Easter with pastel colours so I only put a drop of food colouring in each bowl.
Once the biscuits are completely cold spread with the icing and add sprinkles of your choice. Return to the wire rack to dry.
Makes about 24 biscuits
