I love peanut butter. It is probably my favourite flavour of all time. Nothing goes better with peanut butter than chocolate so when I saw this recipe for peanut butter brownies I couldn’t resist giving them a try. They were absolutely delicious. So if you like peanut butter and chocolate as much as I do, get on it!
Peanut Butter brownies
Adapted from Handle the Heat
200g dark chocolate (at least 70% cocoa)
80g milk chocolate
135g smooth peanut butter
170g butter
300g caster sugar
3 large eggs, plus one yolk
1 teaspoon vanilla extract
95g flour
Pinch of salt
9 full-size Reese’s peanut butter cups
Preheat your oven to 180 C and line a 9in square baking tin with parchment paper.
Place the chocolate, peanut butter and butter in a large heatproof bowl and microwave in 1 minute bursts until melted together. Set aside to cool slightly.
Place the eggs and sugar in a large bowl and beat with an electric whisk until light and fluffy, about three minutes. Stir in the vanilla.
Stir the chocolate mixture into the egg mixture and then fold in the flour and salt.
Pour half the batter into the prepared tin and then arrange the peanut butter cups over the batter. Cover with the remaining batter and bake in the centre of the oven for 35 – 40 mins. (40 mins was perfect in my oven as these brownies are very thick).
Leave in the tin to cool for about an hour before turning out to cool completely and cut into squares.
Makes 16 medium brownies.
