RECIPE: Mac n cheese with bacon, broccoli and sweetcorn

I don’t get to cook that much these days. When I get home from work I spend time with Little O and then bath and get him to bed. It makes sense for Mr O to cook while I am doing bed time so we don’t end up eating really late. Every now and then though, I sneak in a recipe and this one is a new favourite. It’s perfect for cold winter nights, doesn’t take very long to make at all and you can feel good about eating it as it’s full of veg.

Mac n cheese with bacon, broccoli and sweetcorn

Adapted from the Sainsbury’s website

125g macaroni
160g frozen broccoli
1 tbsp olive oil
1 onion, peeled and finely chopped
4 smoked bacon rashers, trimmed of fat and cut into pieces
1 tbsp flour
150g soft cheese
200 ml milk
198g tinned or frozen sweetcorn
25g cheddar cheese, grated
20 g breadcrumbs
Boil the macaroni according to the package instructions and drain.

In the meantime, defrost the broccoli and sweetcorn in the microwave and drain. Then heat the oil in a large frying pan, add the onion and cook for five minutes until golden. Add the bacon and cook for five more minutes.

Stir in the flour and add the soft cheese, milk, sweetcorn, broccoli. Cook for a couple more minutes, season with salt and pepper and pour into a large baking dish.

Pre-heat the grill to high. Mix together the breadcrumbs and cheese and sprinkle over the macaroni. Cook under the grill for 5 minutes until golden and bubbling.

Serves 4
