Things I have been cooking lately #176: Chocolate, coconut bites 

Recently I have become obsessed with these coconut bite thingies from Pret and bought loads of them. They’re not cheap though and all the habit was costing me a fortune. I’ve always loved coconut and these are kind of like a healthier version of a Bounty. I decided to try and find a recipe to make my own and this is the result and they’re soooo good!

Chocolate coconut bites
Adapted from The Green Spoon

180g desiccated coconut
125ml melted coconut oil
3 tablespoons honey
125g dark chocolate  (at least 70% cocoa solids)

Place all the ingredients except the chocolate in your food processor and blend for 5 minutes. It’s important to do it for the full 5 minutes to get the right texture.

Line a medium baking dish or Tupperware container with clingfilm and press the mixture firmly into it. Place in the freezer at least one hour.

Remove the coconut mixture from the freezer and cut into bars the size you want. I did 16.

Melt the chocolate in the microwave one minute at a time so as not to burn it. Dip the coconut bars in the chocolate to coat and place on a wire rack to set. Once they’ve hardened enough to handle place in the fridge to store.

Makes 8 – 20 bites depending on how big you cut them

  3. Yum! Me and my mom really love the combination of coconut and chocolate so I think I will be making these. Place an almond inside the bars and we’ve got ourselves a homemade Almond Joy!
