Things I have been cooking lately #175: Quick, easy brownies

I have made loads of brownies in my life and my go to recipe is always Hummingbird Bakery, but there isn’t always time for all the melting and the long cook time especially when trying to bake around a small human. Plus with all that high content cocoa dark chocolate, they’re really expensive to make. This recipe is quick, easy and a lot cheaper and they are sooo good and sooo gooey. I am definitely making these my new everyday brownies. (Disclaimer: I don’t eat brownies every day and I am not suggesting that you do either…)

Quick easy brownies
Adapted from Cafe Delights

115g butter
1 tablespoon coconut oil
250g caster sugar
2 eggs
80g flour
60g cocoa powder
Pinch of salt

Preheat your over to 180 C and line a 8 inch x 8 inch square baking dish with greaseproof paper.

Put the butter and oil in a large bowl and melt in the microwave.

Add the sugar and beat well. Then add the eggs and beat for at least one minute.

Add the flour, cocoa and salt and stir until just mixed. It is very important not to over mix.

Pour the batter into the prepared tin and bake for 25 minutes. Allow to cool in the tin completely before cutting into squares.

Makes 9 – 16 brownies depending on how big you want them.

  3. Nigella Lawson also has a good recipe! Though, copius melting of chocolate still required. As an alternative, Pret brownies are amazing and they require no cooking at all! 🤗

    1. I will check out the Nigella one. I am always up for trying a new recipe.

      That said, I am very partial to a Pret brownie and there is one very close to my office…
