Last week it was really warm so I got very excited and decided it was spring. I was so excited that I decided to buy a whole lot of ingredients to make salads. It turned out it was not spring. It was basically spring teasing us and then deciding to hold off until a yet to be named date. Fortunately even though it was cold and windy when I made this, it was still delicious so we didn’t feel too sad that we had to eat it wearing jumpers.
Super food salad
Adapted from Everyday Super Food by Jamie Oliver
250g pre-cooked quinoa
2 limes
1 avocado
1 mango
300g baby tomatoes
Olive oil
Salt
Pepper
2 corn on the cob
4 rashers streaky bacon, cut into thin strips
1 red chilli, finely sliced (and de-seeded if you like)
1 clove of garlic, finely chopped
Half a bunch of fresh coriander, chopped
50g feta
Peel and de-seed the mango and avocado and chop into cubes. Halve the baby tomatoes. Place the mango, avocado and tomatoes in a large bowl with the juice and zest of the limes, 2 tablespoons of olive oil and salt and pepper to taste. Set aside.
Place a large griddle pan over a high heat. Grill the corn on the cobs on all sides in the dry pan, turning frequently until nicely charred.
While the corn is cooking, place a small frying pan over a medium heat. Add the bacon, chilli and garlic and cook until golden brown, stirring regularly. Add to the bowl with the lime juice mixture.
Carefully cut the corn off the cobs and add to the bowl. Stir in the quinoa and coriander and crumble over the feta. Season to taste and serve.
