So the ice-cream maker and I are now best friends and I have been experimenting with new flavours. This week I decided to combine my favourite thing – peanut butter, with bananas… which I like the flavour but not the texture of. Of course these two things go brilliantly together and the banana texture is no longer an issue for me once pureed. Plus you’d never think it was dairy and sugar free.
Banana and peanut butter sorbet
3 medium bananas
1/4 cup honey
1 cup of coconut milk
100g smooth peanut butter
If your ice cream maker is one that needs the bowl to be frozen before use, put it in the freezer now.
Roughly break the bananas into pieces and add to your food processor. Process until mostly smooth. Add the honey and process to combine. Add the coconut milk in a steady stream while the food processor is running. Add the peanut butter and process to combine.
Cover the mixture and refrigerate overnight.
Pour the mixture into your ice cream machine and churn until it reaches a soft serve consistency. This took about 15 minutes in my ice cream machine. You can either eat it at this consistency or you can freeze it until it reaches a stiffer consistency.
Makes about 1 litre
