Mr O is a bit obsessed with brunch. It’s basically his favourite meal. I think mostly because he gets to have a lie-in and still eat eggs. After we go out for brunch but it’s hard to keep me out of the kitchen and I have now perfected my own tasty brunch dish featuring eggs, chorizo, avocado and mushrooms and Mr O loves it!
Mr O’s Mega Brunch
80g chopped chorizo
1/2 teaspoon smoked paprika
200g cocktail tomatoes, halved
200g sliced mushrooms
2 spring onions, sliced
2 eggs, beaten
A splash of milk
1 avocado, peeled and sliced
Heat a large frying over a medium heat. Add the chorizo and cook until it releaes some of its juices. Add the smoked paprika and cook for a minute. Then add the tomatoes, mushrooms and onions and fry until the onions soften and the mushrooms brown.
While you are cooking the chorizo mixture add salt, pepper and a splash of milk to the eggs. Pop a small frying pan over a low-medium heat and pour in the eggs. Allow to settle for a minute before stirring to scramble. You want it to be just cooked through.
When the chorizo mixture and the eggs are cooked split them between two plates. Serve with the sliced avocado on the side and buttered toast of your choice. I had mine with German rye.
