Things I have been cooking lately #131: Salmon with avocado salsa

I have to admit to being a bit obsessed with avocados. There is something so delicious about their cool, creamy flavour and I chuck them into all kinds of different meals. When i found this recipe that mixed salmon (which I also love) with a tasty salsa I was intrigued and had to try it out. What I ended up with was a very tasty, very healthy dinner that I will definitely be making again.

Salmon with avocado salsa

Adapted from the cookie rookie

2 salmon fillets
Low calorie olive oil spray (or 1 teaspoon of olive oil)
1/2 a teaspoon of salt
1/2 a teaspoon of ground cumin
1/2 a teaspoon of smoked paprika
1/2 teaspoon of garlic powder
1/4 teaspoon chili powder
1/2 a teaspoon black pepper

For the salsa
1/2 a ripe avocado, cubed
1/4 red onion, finely chopped
Juice of two limes
Half a red chili, deseeded and finely chopped
1/2 bunch of fresh coriander, finely chopped
Salt to taste

Mix the salt, cumin, paprika, garlic powder, chili powder and black pepper together. Spray the salmon fillets with a little olive oil spray (or rub with the olive oil) and then rub with the seasoning mix. Pop in the fridge for half an hour for the flavours to infuse.

Mix together all the salsa ingredients and set aside.

Heat a griddle pan over a medium-high heat. Fry the salmon on each side for about 2 1/2 minutes. Serve with the salsa and salad on the side. I served mine with some fresh leaves and baby tomatoes.

Serves 2 – 173 calories per serving

      They’re amazing for healthy fats. I eat so many of them!

  2. We have salmon once or twice a month, but rarely avocados–no one else loves them as I do.

      They’re definitely an acquired taste. i grew up eating loads of them because they are super common in South Africa so they’re perfectly normal to me but Mr O took a little convincing.

      You definitely should and make sure they’re exactly ripe.
