So I have a new kitchen toy. It’s called a spiralizer and you can use it to turn firm vegetables like courgettes into thin strands that resemble spaghetti and then eat that in place of pasta to up the veg in your meals (and cut carbs if you’re into that kind of thing). I love courgettes so I started my experiments with the spiralizer with them, which turned out to be delicious.
Courgetti with prawns, asparagus and chilli
2 courgettes
2 cloves of garlic finely chopped
1/2 a red chilli finely chopped
225g fresh or frozen raw prawns
200g cherry tomatoes, halved
8 asparagus spears cut into thirds
A squeeze of lemon juice
Salt
Pepper
Olive oil/ olive oil spray
Spiralise the courgettes and set aside.
Heat a little olive oil (or spray with cooking spray) in a large frying pan. Add the garlic and chili and fry for a couple of minutes. Add the prawns and cook until they turn pink. Squeeze over the lemon juice and then add the tomatoes and asparagus. Cool until the asparagus is just tender. Add the courgetti and toss for a couple of minutes to heat through. Season with salt and pepper and serve.
Serves 2
Where did you get the spiraliser from>? After reading this i’ve decided I needed one in my life otherwise there is just no point to my life…
It came from good old Amazon. It’s an ATZ brand one. On special at the moment.
The spiralizer sounds interesting! But I kind of prefer cakes, brownies & muffins. 😉
Hahahahaha! I promise more desserts coming soon.
I’ve been meaning to buy one of those. I’ve seen them in action and love the whole concept. Nice and yummy post, Abbi.
Thanks! I can highly recommend getting one. So quick and the results were delicious!
Leave out the tomatoes and I’m in!
Maybe you could replace the tomatoes with another vegetable you enjoy. Maybe sweet corn or sugar snap peas?
Maybe yellow squash!
That looks so good!!! Funny thing my husband asked me when he saw your blog post, “whats ‘coorgetty’?” haha.
I suppose you might call it zuchinetti?
i’ve also seen it referred to as zoodles
Beaitiful (and, I bet, delicious) dish! Need a spiralizer in my life
I got mine on Amazon if that helps.
