Things I have been cooking lately #121: Tandoori chicken salad

Summer has finally arrived in London and over the past couple of weeks it’s actually been quite hot. When the temperature goes up all I crave is salads, which is pretty handy when it comes to trying to lose weight. I got this spicy salad recipe from the Weight Watchers website and while it’s not exactly a substitute for a curry it does help to deal with any cravings for those kinds of flavours.


Tandoori chicken sald

Adapted from

150g fat free natural yogurt
2 tablespoons madras curry paste
1/2 teaspoon turmeric
4 skinless chicken breasts
A couple of handfuls of baby leaves
4 sprigs of fresh mint, leaves picked and chopped
Half a cucumber, cut into cubes
16 cherry tomatoes, halved
Half a lemon cut into wedges

Place the chicken breasts in a shallow dish with a lid. Mix together the yogurt, tumeric and the madras paste and pour over the chicken breasts. Leave to marinate for at least 30 minutes but preferably overnight.

Preheat your grill to medium. Remove the chicken breasts from the marinade and place on the grill tray. Grill the chicken breasts for 8 – 10 minutes on each side basting occasionally with the marinade. When the chicken is cooked set it aside for 10 minutes before slicing.

Arrange a handful of leaves on each of four plates. Add the mint, cucumber, tomatoes and cucumbers and then arrange the chicken slices on top. Serve with lemon wedges.

  6. I don’t know when last I actually had a salad (we are currently in winter), but it sounds like a damn fine idea).

      Definitely one to save up for the summer. Winter needs to be all about SOUP!
