Pesto is one of the most versatile sauces you can make. It works stirred into pasta, as a sandwich or burger topping, a pizza base or just a tasty condiment and while you can get some pretty good jarred versions, none of them come close to home made pesto which is super quick and easy to make. I knocked up this basil pesto for a family braai (bbq) and we ate it with grilled portobello mushrooms and haloumi.
Basil pesto
1 1/2 cups fresh basil leaves, packed
2 cloves of garlic
1/4 cup freshly grated parmesan cheese
1/4 cup pine nuts
1/4 cup extra virgin olive oil
Salt
Add the basil, garlic, parmesan and pine nuts to a blender or food processor and process until well mixed. Slowly add the olive oil while continuing to process. Add salt to taste.
Store in an airtight jar in the fridge.
Makes one cup
